Quarantine Cooking: Broccoli Delight

Hello everyone! Welcome to BirthMay 2020! Today I wanted to share my experience cooking a broccoli delight dish.

Now, I’m not sure if that’s the “official” name of the dish, because I got it from a Bon Appetit video of Carla making “broccoli delight” but then when I tried to look up the recipe it was called a “cheesy, crispy broccoli skillet”. But anyway, I watched the video and the dish looked so good that I decided I had to give it a try, even though it’s cooking and I am much more into baking.

Now, because I’ve posted so many cooking and baking posts for BirthMay I was going to put off this post, but then I had to rearrange my posts and plus I didn’t want to feel “behind” on this. Also, I’m really liking posting what I’m making as full posts, rather than listing them on my monthly Life posts and not really talking about them fully in an effort to keep those posts on the “shorter” side. I’m thinking if I keep this up, I’ll still try to post a normal post and then maybe do a bonus cooking/baking post in the future. Or I might try to do a separate post like a “five recipes I’ve tried recently” and lump a few together. I haven’t quite decided yet!

Cooking Broccoli Delight

So, you might remember my Bon Appetit obsession from various baking posts I’ve done recently. Right now, the staff from the BA test kitchen are all working from home, and that includes cooking at home! They’ve been sharing dishes they make at home, comparing how they all do different common dishes, and more. I saw Carla did this dish and showed my mom, who was immediately interested in this dish and asked me if I would please, please, please make it. I said “sure!” even though I really don’t cook. But, I do want to learn and it seemed easy enough.

I already had most things in the recipe, or at least my mom did. I just had to make sure broccoli was already on the grocery list (it was, because my mom really wanted to try this) and then added white cheddar cheese. The white cheddar was actually super difficult to find. We kept finding the yellow cheddar blocks but no white cheddar blocks. We did see sliced white cheddar but didn’t want to use that. Eventually we did find some after checking three stores (we were already going to those stores for other groceries, so we weren’t just going for one thing), but it was still hard to find because there were three separate cheese sections in that store!

While cooking, the broccoli took a really long time to cook. Honestly, I got really bored waiting. I feel like it’s different with baking because you can leave the stuff to bake and do something else (while still in the kitchen and checking periodically to make sure it doesn’t burn of course!). But with this, I felt like I had to watch it constantly to make sure it wasn’t burning and that it was actually cooking, plus to see when I could add the cheese. I think that maybe if I was more confident cooking and not a brand new kitchen user then I might not have been so worried so maybe that’s the key! Plus my mom kept making me “turn” the broccoli over so it wasn’t flat most of the time and I think that made it cool off and not cook as much as if I had just left it as Carla did in her video.

However, even after adding the cheese I felt I had to keep watching it. Honestly, it was quite a ton of waiting! I really don’t think I like cooking, but it’s still fun to try new things. Here’s the result!

Ta-da! I thought it was pretty good, although I think I put too much cheese in. When watching the video I thought I saw Carla use the entire cheese block but when watching it back she didn’t specifically say when cutting it but later in the video she said she was adding half the block. Even so, I thought it was really good! My parents weren’t such a big fan of the cheese though and Carla did say you could try with other cheeses such as mozzarella, which they do like more. I think next time I make this dish I’ll try it with mozzarella instead. If I do, do you guys want a post update?
